Insanely fast and fabulous gluten free pasta salad

This really great, gluten free pasta salad is so fast and easy it’s ridiculous. Here’s what to buy at the store:

Gluten free (or regular) pasta

Jar of chopped, sundried tomatoes

Jar of artichoke hearts

Package of pre-cooked shrimp

Package of pre-washed spinach or arugula

Jar of chopped olives

Hot pepper flakes

Directions:

Cook pasta according to directions – cook for whatever number of people are eating

Chop a handful of artichoke hearts

Chop a cup or more of raw spinach or arugula

Once the pasta is cooked, drain and put into a beautiful salad bowl.

Now all you do is throw in the above ingredients – to your taste. Sprinkle on a pinch of salt (or to taste), and a few pinches of hot pepper flakes (to taste), and stir everything together.

This makes a super easy and very delicious entree salad.
